Green Santolina – Santolina viridis

  • Culinary use

    Green Santolina, otherwise known as Olive Herb, is a perennial Mediterranean herb with yellow flowers and intensely perfumed leaves that are similar to olives.

    In the kitchen, the leaves of Green Santolina are used to flavour fish and omelettes.

  • Medicinal use

    The Green Santolina plant is both medicinal and decorative. This herb has therapeutic digestive properties, together with antiseptic, anti-itching, anti-spasm and stimulating capabilities.
