Vegetarian lasagna with ricotta cheese and Sunny HeRBs basil

This recipe gives you a new, light and vegetarian version of the famous Italian Lasagna, filled with a creamy blend of ricotta cheese and Sunny heRBs basil. Perfect as a first course with a delicate flavour.

  • 250 g Lasagna sheets
  • 250 g Ricotta cheese
  • 10-15 Basil leaves Sunny heRBs
  • 15 g Pine nuts
  • 30 g Parmesan cheese
  • Salt and black pepper to taste
  • Extra virgin olive oil


  • Wash under running water the Sunny heRBs basil leaves
  • Put the leaves in a blender with some extra virgin olive oil, the pine nuts, salt and pepper to taste. Blend
  • Once the mixture looks smooth, add in the ricotta cheese and stir till all the ingredients are well blended
  • Preheat the oven to 200° C
  • Pour a drizzle of extra virgin oil on the bottom of a baking dish; spread some ricotta and basil cream and arrange the lasagna sheets on top of it. Repeat layers till you have ingredients
  • Top it all with the parmesan cheese
  • Bake for 20 minutes at 200° C, until golden brown
